Gobelet pruning; Summer prunning; Control of load of grapes per vinestock.
Hand picking. Selective picking.
Semi-carbonic maceration. Control of temperatures during skin contact and after press up to end of Alcoholic fermentation.
Pressing at faint pressure (2 bars maximum).
Skin contact prolonged during 8 to 9 days.
Worth keeping 4 to 6 years old.
Can be served at 16-17°C temperature with sauced meat, game, duck magret, strong cheeses.
