Semi-carbonic maceration. Control of temperatures during skin contact and after press up to end of Alcoholic fermentation.

Release, pumping-over.

Pressing at faint pressure (2 bars maximum).


Skin contact prolonged during 9 to 10 days.


Worth keeping 4 to 6 years old.


Can be served at 16-17°C temperature with sauced meat, game, strong cheeses.
